Gluten is a protein...

Anonymous: Thanks for reading! Gluten is a protein found primarily in wheat, barley, and rye... so, most breads and pastas are off-limits to those with gluten sensitivities. Gluten is what makes them chewy and makes dough sort of glue-y.

If any of those three are listed in the ingredients- it's a no-no if you're avoiding gluten. In addition: I mention soy sauce a few times in the blog post because the most common types of soy sauce in the US contains wheat as an ingredient. Beer is another item that traditionally contains gluten due to the use of barley.

For people with severe gluten sensitivities, even the smallest contamination of wheat flour in a food prep area or factory line (as I mention in the blog- oats are gluten-free themselves but are usually contaminated by being grown near wheat field and processed on shared equipment at factories) can cause extreme intestinal pain and/or discomfort. While other people with slighter sensitivities experience a discomfort similar to "I just gorged myself on a buffet and really regret it/ ate something that didn't agree with me" after eating a normal sized meal that contains gluten and don't really realize that there's a connection between gluten foods and that discomfort because it happens so frequently. They just think that's what you feel like after eating.

Let me know if you have any other questions.

I hear so many people talk about being "glute...

I hear so many people talk about being "gluten free". Which is a horse of a different color from what I do like to do- talk about restaurants, products, and foods that make eating gluten-free and vegan a tad easier.

I have also been getting haggled about some of my meals not being nutritious enough. Which seems odd, since they're MY meals and not what I'm telling anyone else to eat. They just happen to be what I bothered to eat at the time.

I'm glad you're reading and hope this entry doesn't sway you against reading or commenting in the future.

I have no problems with questions like yours about the salad getting asked. That is what I like! Now, how about some low cal, protein ideas for us weight conscious vegans? The noodles & carrots look & sound great, but I can't eat a lot of food like that and not gain weight. You must have a very zippy metabolism. Cashews, walnuts, pecans, maybe even slivered almonds. Packed with protein, keep you feeling full, help with the blood sugar, and no worries about proper refrigeration.

Black beans are great for protein and fiber, but can also cause gas that might not be ideal for a mid-day meal.

Brown rice is also a good idea. Or quinoa, which is my favorite multi-purpose superfood in addition to the fact that it cooks up faster than brown rice.

Another idea would be to cube some tempeh and put it on top.
